The midfielder's 15-minute hat-trick, the first of his career, has piled more pressure on Tottenham, who had attempted to sign him last summer.
This win has also pushed Burnley to the brink of an immediate return to the Championship, with the Clarets now 12 points from safety. The visitors had taken the lead through Zian Flemming's first-half stoppage-time goal, but Gibbs-White equalized in the 62nd minute before scoring a superb volley to put Forest ahead. He then sealed his hat-trick with a wonderful header in the 77th minute, becoming only the third player to achieve this feat for Nottingham Forest in the Premier League. Substitute Igor Jesus added a fourth goal in stoppage time to cap off an impressive comeback.
Forest's victory, which saw them score with every shot on target, extends their unbeaten run to seven games in all competitions and marks their first home league win since December.
